Souper Sunday Week 4

What a great week for football…Bears win and on Monday night, the Steelers won too! (I love when Pittsburgh plays on Monday nights because those announcers are obsessed with the word confluence when referring to the 3 rivers in Pittsburgh and they have NO idea how to pronounce Monongahela) Brett and I have a compromise when it comes to teams…as long as they never play each other, I will always root for the Bears and he will always root for the Steelers. God help us if they ever play each other…

This week Brett and I sort or concocted our own soup – Sausage and Potato – and it was souper!!!

6 large potatoes, cubed, boil for approx. 10 minutes and drain.

Put in crock pot with the following:
2 onions, chopped
1 lb. bulk hot sausage, browned and drained
5 cups water
2 cups milk (I recommend using a can of evaporated milk and supplement the rest w/ regular milk)
2 T parsley
4 chicken bouillon cubes
Salt and pepper to taste

Cook on high in the crock pot four hours and check. We cooked ours too long, so keep an eye on it that the liquid doesn’t disappear. When potatoes are done, mix ¼ cup flour with enough milk to make a thin paste. Whisk into soup to make it thick. Serve with cheese, bread or whatever else makes it a bit unhealthier!!!
